How to Make It

Step 1

Warm oil in a skillet over medium-high heat. Sauté onion until softened, about 3 minutes.

Step 2

Add chorizo. Sauté until warmed through, 1 to 2 minutes.

Step 3

Add chickpeas, cherry tomatoes and paprika. Cook until tomatoes soften and juices are simmering, 5 to 7 minutes. Season with salt and pepper. Sprinkle with parsley and serve.
