How to Make It

Step 1

Combine first 3 ingredients in a large saucepan, and bring to a boil. Cover, reduce heat, and simmer rice mixture for 20 minutes.

Step 2

Heat oil in a large skillet over medium-high heat. Add chicken and onions; sauté 8 minutes or until chicken is done. Preheat oven to 450º.

Step 3

Arrange pear slices in a single layer on baking sheets coated with cooking spray. Bake pear slices at 450º for 10 minutes or until tender.

Step 4

Combine rice mixture, chicken mixture, pears, cranberries, sugar, salt, and cinnamon in a large bowl. Toss gently.

This looked like a wonderful way to use up Thanksgiving turkey and apple juice. Used Lundberg wild rice blend which, after an hour of cooking, was still undercooked. Also roasted pears some ofwhich were't fully ripe. Mistake. In the end a real disappointment. Maybe better with fresh chicken and fully ripened pears.

This recipe was easy and delicious. I didn't use apple juice when making the rice to avoid making the dish too sweet. I also thought the cinnamon was not necessary.

This is one of my favorite recipes. If i'm feeling lazy, i'll skip the roasted pears and go with a bag of Uncle Ben's microwavable brown and wild rice. It takes all of 5 minutes to prep.
