Satay is an Indonesian-style kebab featuring small cubes of meat or poultry; the kebabs are usually served with a spicy peanut sauce. Although satay is often served as an appetizer, this version is hearty enough for a main dish.

  • Soak 12 (6-inch) wooden skewers in water 30 minutes.

  • . While skewers soak, combine first 7 ingredients in a large zip-top plastic bag; seal and gently shake bag to coat chicken. Marinate in refrigerator 15 minutes.

  • . Combine soy sauce and next 5 ingredients, stirring with a whisk.

  • . Prepare grill.

  • . Remove chicken from bag; discard marinade. Thread each chicken tender onto a skewer. Place chicken on grill rack coated with cooking spray. Cover and grill 3 minutes on each side or until done. Serve chicken with peanut sauce.
