Use Chicken and Mushroom Stroganoff chicken to make this fresh main dish salad. 

How to Make It

Combine mayonnaise, orange rind, orange juice, vinegar, ginger, salt, sugar, and black pepper in a large bowl. Add bok choy, radishes, dried apricots, almonds, dark meat chicken, and chicken breast; toss.

Surprisingly Delicious!

Wasn't sure what to expect as I have never had raw bok choy before.  The hearty combination of the roasted chicken meat, and the crunch of the bok choy and radish, the occasional crunchy toasted almond, along with the orangey dressing was very tasty.   My grocery store didn't have the apricots, though.....I'm sure it would have been even better with those.  It was the perfect dressing to salad ratio, so make sure to measure all ingredients.
