  • Combine hominy, diced tomatoes, chicken broth, chipotle chili, garlic, cumin and chicken in a slow cooker. Cover and cook on low heat setting until chicken is cooked through and flavors have developed, 5 to 7 hours. Just before serving, stir in cilantro and season with salt.
