The dressing was TERRIBLE. I don't know how anyone could eat it. Maybe I have the wrong kind of curry powder or something? It was just so salty and sour. I didn't bother trying to remedy it. I threw it out and dressed the salad with a bottled asian-style dressing I had on hand.
If anyone has ideas on how to make the dressing edible I'd love to read them. I had high hopes for this salad.
Had to improvise a bit as I didn't have all ingredients . Used white onion .. no red. Bbq'D chicken; sprinkled with chipotle mango seasoning from club house before cooking. Everyone loved it. Dressing was fab. Added a pinch sugar...really brought the lemon flavor. Even felt healthy. Daughter said it was the best thing I ever made.
