My husband and I loved this recipe. I changed it up a bit though. I sauteed onion, 2 clove of garlic, and fresh mushrooms before adding other ingredients. I also added Italian herbs and spices to chicken and onion mixture. I used mozzarella cheese instead of cheddar and added a Parmesan and bread crumb mixture to the top before baking. Already have an extra in the freezer. I don't cook much and my husband said I could make it again. So I know it is a winner!
This was easy and excellent, although like other previous reviews I used fresh spinach and white and portabello mushrooms. I sauteed them in olive oil and garlic. I used less parmesan and added flavored bread crumbs on the top. I used cheddar and mozzarella and I grilled the chicken which gave it a nice flavor. Wow was this great. I think next time, and there will definately be a next time, I will sprinkle chopped sun dried tomatoes on top as well. YUM.
