Crusty on the outside, gooey on the inside, this sandwich requires little effort and makes a satisfying lunch or light dinner.

How to Make It

Step 1

Preheat panini press.

Step 2

Spread bottom half of bread with pesto. Top with tomato slices, chicken, and cheese. Top with bread.

Step 3

Place sandwich in panini press; cook 3 to 4 minutes or until cheese melts and bread is toasted. Cut into quarters, and serve hot.

I made this after 3 months of the recipe sitting on my counter.  I had left over chicken from a roasting chicken I had made.  I had the pesto from my garden. My market did not have ciabatta so I used Arnold sandwich thins.  I served it with chips and coleslaw.  YUMMY!.......GREAT flavor.  I wouldn't hesitate to serve this to guests....especially as a special lunch with a cold soup.
