Combine all ingredients except the cooking spray; marinate in refrigerator for 2 hours.
Thread 1 chicken strip onto each of 18 (6-inch) skewers, reserving marinade. Place skewers on a broiler pan coated with cooking spray; broil 6 minutes. Turn skewers over; baste with reserved marinade. Broil 6 minutes or until done.
I was going to use chicken thighs but mine went bad so I used boneless pork chops, I also didn't have any honey so I used 100% pure maple syrup and I added a little garlic pepper to the marinade because I LOVE garlic. This came out really good. I would totally try this marinade on other meats.
This is one of my favorite make ahead recipes as I try to prep a lot on weekends since I get home late from work. I use whole boneless, skinless chicken thighs, skip the skewers, and broil for about 6-8 minutes per side. The next day, they are still juicy. Excellent flavor, be sure to marinate for several hours.
