The secret to tender pancakes? Mix the batter just long enough to incorporate the ingredients, and flip them only once.

How to Make It

Step 1

Whisk together pancake mix and milk in a large bowl, whisking just until dry ingredients are moistened. Stir in chicken and next 6 ingredients, stirring just until blended.

Step 2

Pour about 1/4 cup batter for each cake onto a hot (350°), lightly greased griddle or large nonstick skillet. Cook pancakes 3 minutes or until tops are covered with bubbles and edges look dry and cooked; turn and cook other side 5 to 6 minutes or until done. Serve with Quick Cream Gravy, if desired.

Step 3

Note: For testing purposes only, we used Aunt Jemima Complete Pancake & Waffle Mix and Simply Potatoes Shredded Hash Browns.

Step 4

Chicken-and-Rice Cakes: Substitute shredded Italian six-cheese blend for colby-Jack cheese blend and 1 cup cooked rice for hash browns. Proceed with recipe as directed.

Step 5

Quick Cream Gravy: Bring 1/4 cup dry white wine to a boil over medium heat in a small saucepan. Reduce heat to medium-low, and cook 1 minute. Add 1 cup water; whisk in 1 (2-oz.) package roasted chicken gravy mix and 1/4 tsp. pepper. Increase heat to medium, and return to a boil. Reduce heat to low, and simmer 3 minutes or until thickened. Whisk in 2 Tbsp. heavy cream. Makes 1 1/4 cups. Prep: 5 min., Cook: 5 min.

Step 6

Note: For testing purposes only, we used Knorr Roasted Chicken Gravy Mix.

This was pretty bland. Bland and a soft texture is a boring combination. We prefer something more zippy.

My "boys" (one is the 6'7" 250lb hubby and the 6' 150lb teenager) LOVED this recipe. I used very little oil to fry these in (like you would use for pancakes), and I thinned out the gravy with skim milk so it wasn't too rich. This is definitely a keeper.

The recipe is very, very rich. I had a hard time putting it down. However, my boyfriend absolutely loved them. This could be a very good recipe, but isn't exactly a crowd pleaser.

I made these for husband and myself last night for dinner, I was super excited about them, they looked great in the picture. Well I made a full batch and the gravy to go with them and they were gross. I will not be making these again we ended up ordering pizza.

These are excellent and versatile. We added sauteed mushrooms and served with a side vegetable. The gravy is perfect for these. You can also substitute self-rising corn meal for pancake mix for a change.

Super Quick and Easy recipe. My whole family loved it. I didnt make the quick gravy that is suggested. I just used a McCormick chicken gravy packet and made it with 1/2 water and 1/2 milk. It was great
