These chewy coffee brownies make a delicious dessert or an indulgent morning treat served with your daily cup of joe.
1 1/2 cups firmly packed dark brown sugar
1/2 cup reduced-calorie stick margarine
2 1/2 tablespoons instant coffee granules
1 tablespoon vanilla extract
2 egg whites
2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup semisweet chocolate morsels

How to Make It
Combine sugar, margarine, and coffee granules in a small saucepan. Place over low heat; cook for 4 minutes or until margarine melts and the mixture is smooth, stirring frequently.
Combine sugar mixture, vanilla, egg whites, and egg; beat at low speed of a mixer until smooth.
Combine flour, baking powder, and salt; gradually add to creamed mixture, beating well. Stir in chocolate morsels. Spread batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350° for 18 minutes; let cool in pan.
A half a cup of chocolate chips gets lost in this. I'd suggest doubling it to a cup and using mini chocolate chips so you get some in every bite. A piece without any chips in it is blah. It's the combination of the coffee 'cake' and chocolate chips that works. Until I try it with the changes I suggest I can't give it a good rating.I don't know why the previous reviewer thought it is like a blondie. It's nothing like that at all.
