Used this recipe to use some fresh tomatoes before they went bad. Used 2 cups of fresh tomatoes (some not fully ripened) and 1 cup of canned (small) of diced tomatoes. Also added a couple shakes of cayenne pepper for a little zip! It was delicious! Everyone loved it! So easy, too! Give it a try.

This is my go-to recipe for my brunch menu! I double it and put in 9 by 13 pan to feed many! I always get compliments and requests for the recipe!!!
