Reviews for Cheesy Meat Loaf Minis
These were wonderful!!! I am not a huge fan of meatloaf- it's often dry and tastleless, but the different ingredients kept it so flavorful!Loved the horseradish! I accidentally forgot the egg, but everything still held together nicely. I used 2% sharp cheddar. I loved the automatic portion control as well. We will definitely have these again- well worth the effort!
This recipe was fantastic and holds up to what the other reviewers have raved about it. I would make this again in a heartbeat.
This was super yummy! My 5 yr old turned his nose up at it and then scarfed down 2 helpings.
Trying this is well worth it. Yummy, moist and flavorful with very few adjustments! On my schedule of things to make.
Very very good. I followed the recipe exactly except I used ground beef instead of sirloin. We had it with Pioneer Woman's crashed potatoes and green beans. I make meatloaf now and then and it is serviceable, but this recipe is a keeper that I will make again and again. Yum!
This was a really good dish. I loved the chunks of cheese but I don't think the heat of the horseradish was that noticeable. It's a fun recipe for kids because it looks and tastes great but I wouldn't switch out my regular meatloaf recipe for this one.
This is my new go-to recipe for meatloaf....it's delicious!! I changed a few things just based on what I had on hand already.....used smoked gouda cheese, only had Creole mustard, and didn't have fresh bread crumbs so just used plain w/o toasting. Also, added extra fresh garlic. Yum!!
I had this last night and it was DELICIOUS!!! I will be having it again tonight and cannot wait. The flavors and consistancy were excellent.
It was Delicious!!! all of my family LOVED it!! you just couldn't get enough of them!!
Made this the other night, had all of the ing. except the chunky cheese, but used shredded cheese. It was mouth watering wonderful. A little extra work but certainly worth it. Loved it and will certainly make it again and again.
Fun and delicious! I loved the little melty bits of cheese that studded these little meatloaves, and I also liked the automatic portion control (and the fact that every piece had a nice glazed crust). I used panko crumbs in place of fresh breadcrumbs.
This is a winner, my husband loved it and prefers it over mine. A little more time consuming, but well worth it. I made the recipe exactly as written. Great flavors.
I wasn't sure if I wanted to try another meatloaf recipe, as we enjoy the 3 recipes I already make (regular, bacon cheese, and pizza). However, I am SO glad I did. I was a tad leery about the horseradish since I'm the only one who cares for the taste, but wow...this was absolutely outstanding! I have the pickiest husband and daughter and all 4 of us loved it (and that is saying a lot!).
I am not a big meatloaf fan but decided to try this recipe when I saw it in Cooking Light magagazine. Now I am telling everyone that they have to make this. It is so easy to make and it tastes great. It is even great the next day in a sandwich. I ended up shredding both kinds of cheeses which was a time saver. I will definitely make this again!
perfect as written. my husband and one year old daughter could not get enough!
This is a fantastic recipe! I didn't change a thing. My husband went for seconds. I would recommend this to all.
didn't change a thing - this is now my favorite meatloaf recipe!
Made it just like the recipe and the whole family loved it. Will definitely be making this again. It certainly didn't taste like a light recipe.
Excellent flavor, you do not need to modify this recipe. You do need to use a broiler pan to let the juices/grease drain. One mini is 7 weight watchers points, so this was perfect for a weeknight meal and my husband says it is his new favorite meatloaf. Previously it was the barbeque meatloaf from CL.
Really good flavor, moist, cheesy. I used packaged Italian breadcrumbs since I had them already. I would recommend dicing the cheese in very small cubes so that the loaves hold together a little better.
These were absolutely delicious. I followed the recipe as written and don't think I would change a thing. Love the horseradish and mustard! Great comfort food!
Loved these! I used Whole Wheat breadcrumbs instead (still toasted them) and made half the mixture with the horseradish and the other half without (for the kids). I served with teeny potatoes from TJ's and asparagus and all was devoured! This will now be my go to meatloaf recipe!!
I'm not normally much of a fan of meatloaf, but this was very good. I liked the varied flavors within. My 9yo went back for seconds. I omitted the horseradish because I didn't think my kids would like it, and I don't think it hurt the flavor at all. I liked that cooking on a broiler pan made was grease there was left drip away from the loaves.
Really good and moist meatloaf. I used ground turkey due to preference, red onion (only had this onion in fridge), and omitted the horseradish (due to a kid factor) and they turned out much better than I expected. This was my first time making meatloaf, and I will keep this recipe. Served this with a spinach salad.
Very good and fairly easy. Excellent reheated for lunch or dinner. Be sure to cube the cheese SMALL or you'll have it oozing out of the loaves. I might shred the cheese next time to try to prevent this problem. Otherwise the loaves were good and I will definitely make again.
These meat loaves are delicious! This will be among the recipes we use all the time. I served it with a green salad and baked potatoes. The only change I made was to use panko instead of toasting fresh bread crumbs. Don't be put off by the horseradish. It's essential to the flavor, but you'd never guess there's horseradish in it!
Very good. I didn't have white cheddar so I used muenster. I also use whole wheat bread for the crumbs. Definitely will make these again!
Amazing!! These are seriously some of the best meat loafs I've ever had. We added some Worcestershire and made 4 loafs with 1.25 lbs of beef. The flavor is just perfect!
So, so good! I made these tonight and everyone gobbled them up. I omitted the horseradish, though because I didn't think my kids would like it. Otherwise nothing was changed. Delicious!
Easy to make and packed with yummy flavor! I can't wait to pack one of those little mini's in my lunch for tomorrow! I used store bought bread crumbs and omitted the horse radish and it can together just fine. I'm thinking about making them into smaller portions and having them as an appetizer at an up coming party.
My husband and I really enjoyed these. Made them as written except I used panko instead of fresh breadcrumbs. The cheddar cheese and the horseradish combined for a unique flavor. Will definitely make it again.
We had this for dinner last night. I had to be out all day so I left some ground meat defrosting and the recipe and my husband made it for us. He does not cook much and they came out fabulously. They look great with the little cheese nuggets and the glaze of ketchup and they taste great. I would serve for a casual company dinner. We too are looking forward to eating the leftovers. PS he used roquefort instead of cheddar because that's what we had. Delish.
I made this last night for dinner. It was very easy and the kids especially liked the little pockets of melted cheese. The only thing I did not do was toast the bread crumbs. I will definitely make it again!
Lots of wonderful flavors melding together. Can't wait for lunch to have on an onion roll! Will try to make with ground turkey!
Very good. I forgot to buy horseradish so I left that out.
My husband and I both loved the meat loaf minis! It was extremely flavorful, tender and moist. We also made the Salad with Balsamic Vinagrette and it was an excellent side to the meat loaf minis! We will definately add this to our favorites! It was fairly easy to make and cooks quickly!
