This recipe is a play on chicken cordon bleu that's far easier to prepare. Instead of stuffing chicken breasts with ham and cheese, we broil cutlets until done and simply top them with ham, cheese, and a touch of jam. We also tested the dish with cheddar, which you could use in a pinch, but the nutty, tangy flavor of Havarti makes it feel more special.

How to Make It

Step 1

Preheat broiler to high with oven rack 6 inches from heat.

Step 2

Sprinkle chicken with pepper and salt. Heat oil in a large ovenproof skillet over medium-high. Add chicken, and cook until done, 3 to 4 minutes per side. Top evenly with jam, ham, scallions, and cheese. Transfer skillet to oven; broil until cheese browns, 2 to 3 minutes.

I use black raspberry jam from my mother-in-law.  My kids don't like the jam, so I leave that out for them.  We love this recipe and it is fast and easy

I was a little leary of this recipe, I know I would like it but I wasn't so sure my family would.  It was so delicious!  Everyone, even the kids, liked it!  The combination of sweet and savory was divine!  Will definately make this again!

My market does not carry cutlets so I just cut 2 breasts in half then grilled them on our Traeger.  I also used boysenberry jam.  Super yummy.  We devoured them.  Love how easy they are.  Will definitely make again.
