  • Preheat oven to 375°F. Spray 1 sheet of phyllo dough with cooking spray; place another sheet on top, and repeat to create 3 layers. Cut into 4 (4-inch) squares. Repeat process with remaining dough to create 12 squares.

  • Add 2 teaspoons of the mashed potatoes and 1 teaspoon of the cheese to the center of each square; fold edges to the top to create “purses”. Spray with more cooking spray, and place on a baking sheet lined with parchment paper.

  • Bake in preheated oven until golden brown and crispy, about 14 minutes. Cool for 5 minutes before serving.
