Things we love: Impressive appetizers that require minimal time and minimal ingredients. Things we really love: Impressive appetizers that require minimal time and minimal ingredients, and make use of the leftovers in your fridge—i.e. these easy, cheesy potato purses. Supposing you’re not looking to use up leftover spuds, you can also substitute prepared, store-bought mashed potatoes, such as Bob Evans brand, in this recipe.

How to Make It

Step 1

Preheat oven to 375°F. Spray 1 sheet of phyllo dough with cooking spray; place another sheet on top, and repeat to create 3 layers. Cut into 4 (4-inch) squares. Repeat process with remaining dough to create 12 squares.

Step 2

Add 2 teaspoons of the mashed potatoes and 1 teaspoon of the cheese to the center of each square; fold edges to the top to create “purses”. Spray with more cooking spray, and place on a baking sheet lined with parchment paper.

Step 3

Bake in preheated oven until golden brown and crispy, about 14 minutes. Cool for 5 minutes before serving.
