Serves 6 (serving size: about 3 tablespoons hummus and 1/3 cup broccolini)

Pleasantly bitter and bringing a fantastic crunchy texture, broccolini makes for an exceptional partner to rich and creamy hummus. Trust us, after just one bite, you will be hooked on this flavorful, 4-ingredient, topper. Season with salt and pepper to taste and serve with baked pita chips, if desired.

 

How to Make It

Boil Broccolini 2 minutes. Plunge into ice water; drain well. Heat a large cast-iron skillet over medium-high heat. Coat with cooking spray. Add Broccolini; cook 6 minutes, stirring occasionally. Remove from pan; cut into 1-inch pieces. Top Israeli-Style Hummus with Broccolini; sprinkle with sliced red chile, olive oil, and lemon juice.

This review is only for the broccolini portion.  I have made the hummus and it is good, but not needed for my dish tonight.  Broccolini is expensive and thus I do not cook with it often.  I was a little disappointed that the recipe called for cooking spray to be used on a cast iron skillet.  Who does that?  We grilled the broccolini instead.  It was just ok, not something I'd probably make again.
