In a saucepan over medium heat, cook cauliflower, curry, tomatoes, beans, peas and raisins for 10 to 12 minutes, stirring occasionally. Spoon cauliflower mixture over brown rice. Sprinkle with cashews and scallion and serve.

This can be a fast, easy main course for vegetarians, or a substantial side served with chicken (tandoori or other grilled would be best). If you keep a few ingredients in the pantry, and a few others in the freezer, you could be ready to put a healthy meal together very quickly. I got lots of compliments and so did my daughter when she made it.
