This was so good, we had it twice in a week! I once followed the recipe as is. The second time I had some leftover roasted chicken that I shredded. I also substituted the sour cream with plain greek strained yogurt. It was delicious!! A keeper for sure!
Definitely tasty. Quick and easy to throw together. I used onion buns because I had those on hand. I might add some iceburg lettuce next time. DH loved it.
Followed the recipe with two exceptions: didn't have cashews so used peanuts instead and served on whole wheat sandwich slices rather than hamburger buns. Next time will try using Greek yogurt in place of the sour cream and sour cream in place of the mayo. The sour cream/mayo combo called for seems a little too much for my taste. But the proportions need to remain the same in order to keep the curry content intact -- which made the sandwich.
Great basic chicken salad recipe, suitable for a variety of adaptations. I made the salad as-is, put in lettuce cups, and took to work. Yum!
Made this salad using leftover rotisserie chicken from Costco and it was delicious! After reading the reviews, I chopped the cashews but served them on the side and I cut red seedless grapes in half and added them to my portion of the salad while my husband preferred his without the grapes. Great refreshing way to use the leftover chicken -- I will be making this again!
My family LOVES this chicken salad! We have experimented with different kinds of chicken (rotisserie chicken from the grocery store - shredded, herb rubbed chicken breasts, smoked chicken breast, rubbed in olive oil and baked... etc.), and it always turns out amazing. We also add a little bit of salt and black pepper. TIP: AVOID SOGGY CASHEWS! If you plan on refrigerating left overs, DON'T mix the cashews into the salad. Sprinkle them on top of the salad on your bun/bread before you put the two halves together.

Made recipe as is, added a pinch of black pepper, 2 tbps lemon juice and 1/3 asian pear roughly chopped. By adding fruit to this recipe you get the needed added moisture without the fat. I rated it a four star because everything I need to make it is on hand, no trips to the grocery store. Pretty yummy but not the best chicken salad I ever had.
Oh my this is a great recipe. I can't think of a time I've had better chicken salad. Might add some grapes and/or a slice of sharp cheddar next time. Yum.
This is such a crazy delicious and simple recipe...I'm so glad I stumbled upon this when I was looking for something to make for a picnic! The best chicken salad I've honestly ever had with the mixture of cashews, celery and the touch of curry powder.
I have a hard time rating a sandwich more than "good, solid recipe" but this is a great sandwich. I've made it for my work lunches two out of three weeks and it hasn't gotten boring. I made it with dried cranberries the first time and dried apricots the second. Next time I'll make it with diced apples.
I love this chicken salad! I, too, added more (reduced fat) mayo cause it was a little too dry. Also added a tbsp. lemon juice which gave it a nice kick. I'll definitely make it again for a great take-to-work lunch.
Very tasty. I used Swanson canned chicken and worked well. I was not sure about the curry, it was all great! This is a keeper.
I have been looking for a recipe like this for some time. I had a salad like this at the Naples Beach Resort and have been trying to replicate it for sometime. I made the salad as described and put it into a pineapple boat. You cut a pineapple in half lengthwise, cut out the center and cut along the edges so the pineapple can be pulled out in chunks. Add the salad to the center. It's delicious.
