Serves 6 (serving size: about 5 ounces carrots, about 1 cup lentils, and about 3 tablespoons harissa)

The green harissa, Landau and Jacoby's take on ­classic Tunisian hot sauce, adds balancing tang.

How to Make It

Step 1

Preheat oven to 400°.

Step 2

Heat a medium saucepan over medium-high heat. Add 1 tablespoon olive oil to pan; swirl to coat. Add 1/2 cup onion and minced garlic; sauté 5 minutes or until golden. Add stock, lentils, and 2 teaspoons Cajun seasoning; bring to a boil. Cover, reduce heat, and simmer for 45 minutes or until lentils are tender.

Step 3

Combine carrots, 2 tablespoons oil, and remaining 2 tablespoons Cajun seasoning, tossing well to coat. Arrange carrot mixture in a single layer on a baking sheet. Bake at 400° for 30 minutes or until tender.

Step 4

Combine remaining 1 cup onion, remaining oil, cilantro, and remaining ingredients in a blender; process until smooth.

Step 5

Place lentils on a serving dish; arrange carrots on top. Serve with harissa.

Really delicious! I used organic French green lentils b/c I couldn't find black. One jalapeño is plenty unless you like really spicy. I cut the fat part off some of the large carrots and sliced those ends in half longways for more even cooking. My blender isn't great so I used a blender stick and deep bowl which worked much better. Otherwise don't change a thing. Totally worth the time!

I wholeheartedly agree. I rarely use the word awesome but this dish was AWESOME!!! I only had brown lentils and my harissa wasn't as pretty as pictured but the taste was exceptional. And I am pinning it now ;)

Amazing! So much flavor! I could definitely try vegan for a month too if every meal was like this. Easy to make as well, any novice could do it.

This recipe is amazing. It is time consuming but WELL WORTH the extra effort. We made this for Christmas dinner (from the cookbook Vedge) for the non-meat eaters and it was a big hit with everyone. I highly recommend the for anyone trying to increase vegetables in their diet.

I have so few vegan recipes that I can call awesome and would eat again very soon! I just had French green lentils but they worked fine. Just don't cook to mush.The green spicy harissa is amazing and I will be using the leftovers on other things. This is a must try if you are trying to meatless meals. A super starter for your first meatless Monday!

Wow, great flavor! We're not vegetarian or vegan but enjoyed this immensely. It's filling and flavorful and the harissa is incredible.

Filling, delicious, fairly easy to make, though when factoring in a side dish and cleaning it is a little time consuming.  Still, it's a great recipe!  I'll definitely be making ti again.
