How to Make It

Heat olive oil in a large skillet over medium-high heat. Add onion; sauté 15 minutes or until golden. Place potatoes in a saucepan; cover with water, and bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender; drain. Stir in buttermilk, butter, salt, and black pepper; mash with a potato masher. Stir in onion.

Someone should fix the nutritional info on this recipe, I've never heard of potatoes without carbs:)

This was ok nothing super special. I guess it could be better paired with the right dish, but it's not going to set my world on fire.

So delicious! I loved the hint of sweetness the caramelized onions provide and the beautiful color they give the potatoes. Instead of buttermilk, I used low fat milk and it still achieved a great level of creaminess.
