I made these along with the garlic-rosemary pork with vegetables and they were everyone's favorite part of the meal. I made a double recipe because I was serving a lot of people and that was a LOT of work! There are ways to make this much easier:- Use an apple cutter (mine cuts them into 6 pieces) instead of quartering and scooping out the seeds - there's nothing special about the quarters. - Instead of coating them each with brown sugar, just pour some in the pan, stir it into the oil, and arrange the apples in it. The sugar immediately falls off and disperses with the oil anyway.- It took 5 batches to cook a double recipe in my skillet. Use the biggest skillet you can find or do two at once. Don't worry if some get a little burnt or some are underdone. They're good mixed together that way.- Make these the day before and reheat them in the crockpot on low for about 3 hours. They were just as good as making them the same day. Everyone loved them.
