Caramel-Pear-Cheesecake Trifle

This decadent pear-and-caramel trifle is perfect for a party because it can be made a day ahead and it serves a crowd.


  • 4 tablespoons unsalted butter
  • 5 (large) Bartlett pears, slightly underripe; peeled, cored and diced
  • 1 cup Vanilla Bean and Fleur de Sel Caramel Sauce
  • 1 teaspoon unflavored powdered gelatin
  • 16 ounces cream cheese, at room temperature
  • 3 cups heavy cream, cold
  • 8 ounces gingersnap cookies, plus crushed cookies for garnish
