Serves 4 (serving size: 4 zucchini slices, 2 tablespoons tomato mixture, and 1 tablespoon cheese)

Caprese Zucchini gives a nod to the classic Caprese salad as an Italian-inspired topping for this summer veggie.

How to Make It

Step 1

Grill zucchini 2 minutes on each side.

Step 2

Preheat broiler. Combine tomato, basil, olive oil, vinegar, salt, and pepper in a bowl. Arrange grilled zucchini on a foil-lined baking sheet; top evenly with tomato mixture and mozzarella cheese. Broil 2 minutes or until cheese melts.

Grilled, fried, baked broiled or marinated, zucchini is a staple in our family.  This recipe is one of the most flavorful, easy and healthy ways to prepare it.  This is a keeper!

Have made this several times - a great way to serve 'old boring zucchini' to a family who is not very enthusiastic about this particular vegetable.

Cooked zucchini on the stove using grill pan. Will try on the grill next time, which will be soon! Can't believe how good this is. Husband and I ate all by ourselves.
