Great Christmas treat! I made this as directed the first time, and the cake tasted exactly like a store bought angel food cake... so I did the shortcut the second time. I also sliced the cake into three layers and did a chocolate ganache filling. If you do add peppermint extract to the whipped cream as a previous reviewer suggested, do less than 1/4 tsp. That was way too much and I had to dilute the taste by making another cup of whipped cream. It was perfect after that!
I just wanted to add for the bakers that dont have a full house for dessert . This recipe can be made using a boxed angelfood cake mix . One box produces two 8x4 loaf pan sized cakes, and they freeze well if wrapped for storage. Also- if you really want to jazz up the flavor, drizzle some warm chocolate sauce over each serving, or put a pool of it on the plate BEFORE serving the cake on it, and add a dollop of freshly whipped cream on top of each slice. I took the concept and made cupcakes. It worked well for a party where I didn't have extra help to serve a cake! I also added a little peppermint extract to the whip cream frosting!
