Serves 4 (serving size: 3 meatballs, about 1 cup potatoes, 2 Tbsp. sauce)

Kind of like breakfast for dinner, but still breakfast. 

How to Make It

Step 1

Preheat oven to 400°F. Combine sausage, breadcrumbs, egg, sage, and black pepper in a medium bowl; use hands to mix until incorporated. Form into 12 meatballs.

Step 2

Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high, and cook meatballs until browned on all sides, 6 to 8 minutes. Transfer to a baking sheet, and bake in preheated oven until cooked through, 12 to 15 minutes. 

Step 3

Meanwhile, whisk together maple syrup, hot sauce, and ketchup in a small bowl. Set aside.

Step 4

Use a spiralizer to cut potatoes into long, thin spaghetti-like strips. Wipe skillet clean, and heat remaining 1 cup oil over medium-high. Add potatoes, in batches, and cook until crispy and brown, 8 to 10 minutes. Transfer potatoes to a plate lined with paper towels. Repeat with remaining potatoes. Sprinkle potatoes with salt. Divide potatoes among 4 plates; top each with 3 meatballs. Drizzle with sauce; serve immediately.
