4 servings (serving size: 1 filled shortcake)

In this peachy version of strawberry shortcake, you grill the peaches and spoon them onto squares of citrus-flavored shortcake, and then top with sweetened Greek yogurt.

How to Make It

Step 1

Preheat grill to medium-high heat.

Step 2

Combine yogurt, sugar, and 1 teaspoon brandy. Cover and chill.

Step 3

Combine remaining brandy, butter, and honey.

Step 4

Place peach halves, cut side down, on grill rack coated with cooking spray; grill 2 minutes on each side or until grill marks appear. Remove peaches from grill; thinly slice and place in a bowl. Stir in honey mixture.

Step 5

Split each Citrus Shortcake square in half; spoon about 1 1/4 cups peach mixture over bottom half of each shortcake. Top with top half of shortcake and 1 tablespoon yogurt mixture.

citrus shortcake was amazing and followed the recipe exactly. I didn't have the time to follow this recipe exactly but my version was super easy, extremely tasty and the kids and hubby loved it. I used 1/4 c of vanilla superyogurt (Wegmans) + 1 T honey and stirred. Served with diced peaches to the kids (6 & 3). For hubby and I, I added 1 tsp. of Grand Marnier (orange liquor) to the yogurt/honey mixture and served with peaches. Fantastic!!
