BLT Pasta
We love the look of mezze penne, a smaller version of regular penne, but you can use any short pasta you like. The "lettuce" in this BLT is actually tender baby spinach. You could also substitute peppery arugula or even baby kale.

I added one extra slice of bacon (because it was the last one) but otherwise followed the recipe. It was easy to make and really good. We had it with a watermelon fruit salad.
So good and super easy and quick. I added garlic with the tomatoes. Can't believe this doesn't have more calories/fat...
Can these things be cooked and put together the next morning
Delicious. I could go for a little more spinach. Leftovers were a little less good b/c the bacon wasn't so crispy anymore, but I looked forward to eating leftovers anyway.
This dish is a great weeknight meal. It comes together quickly and easily. I used Nueske's bacon, which isn't as lean as center cut, and I topped it with Parmesan cheese instead of Romano.

This got raves from the whole family! The dish came together very quickly for an easy summer supper. I used peppered center-cut bacon which added a nice kick, and our pasta was mini farfalle (bowties). This is a keeper!
Comes together easily in one pan. Just needs more salt and probably less spinach.
Big hit at dinner last night. Husband and 10 y.o. daughter loved it. Used regular bacon instead of center cut, Good Friday night or weekend meal.
Made exactly as written except doubled it. Very easy and very good. Will definitely make again.
Outstanding and very quick to make. I made only a couple of very minor changes. I subbed GF pasta and since we don't really care for cooked spinach, I tossed the uncooked spinach in at the end with the warm, drained pasta and tomatoes. I also drained all but about a tablespoon of the fat from the bacon before adding the tomatoes because I didn't use center-cut bacon. I cut the bacon by a 1/3, and increased the serving size by half. I'm keeping this recipe handy because it takes 20 minutes to make, it's delicious and satisfying and under 500 calories even with the increased serving size. A little fresh basil or tarragon would have been great, too, think.
