How to Make It

Step 1

Microwave beans on HIGH 2 minutes, or until heated through.

Step 2

Heat a nonstick skillet over medium heat. Add tortillas, one at a time; cook 1 minute on each side.

Step 3

Divide beans evenly among tortillas. Top with even amounts of cheese, lettuce, carrot, and salsa.

This is a good, quick lunch. The serving size of 3 tacos each, is generous and welcome if you are dieting. With less than 10 minutes prep, it is a quick one to fix. You could easily add seasoning to the beans for more zip, sprinkle cilantro on it, etc. As is, it's the salsa that adds the interest. But, really, it is tasty as is, and with it being so simple and healthy, it is a simple go-to diet lunch that is filling.
