Made this as written for 4th of July get together. Very different spin on watermelon. Flavor and textures are absolutely excellent. Best eaten within a few hours of adding the dressing. Gets a little soggy after that.

Such an unexpected combination of ingredients but this salad is spectacular. It is best eaten immediately as it does not taste all that great the next day.

Really outstanding flavor; a tasty new way to eat watermelon. I made it like the recipe except left out the mint.
