How to Make It
Preheat oven to 275°F.
Stir together the oats, nuts, pumpkin seeds, milk powder (if using), chia seeds, sesame seeds, salt, cinnamon, and cardamom in a large mixing bowl. In a separate bowl, whisk together the honey, oil, brown sugar, vanilla, and egg white until evenly combined. Pour the honey mixture over the oat mixture and stir to coat evenly. Spread mixture into an even layer on a rimmed baking sheet.
Bake at 275°F, stirring (and spreading back into an even layer) every 15-20 minutes, until golden brown and toasted—about 1 hour, 15-20 minutes total. Allow granola to cool and crisp completely on the baking sheet. Store in an airtight container.
