Seems like beets and goat cheese are a profoundly delicious combo, no matter how you spin it—so we threw that thought into a blender and made decadent milkshakes. Low and behold, the theory holds true. Backing beets’ robust earthy sweetness plus goat cheese’s rich tang with vanilla ice cream and a bit of aromatic orange zest makes for an incredible dessert experience. Although you are certainly welcome to cook your own beets for this recipe, precooked are a super convenient option here, as you only need about 1/2 cup and you need them to be unseasoned. You can find packaged, precooked beets at most major supermarkets. 

How to Make It

Combine beets, goats milk, honey, lemon juice, orange zest, and salt in a blender; blend until combined. Add goat cheese and ice cream to blender; blend until just combined. Pour milkshake into 2 chilled glasses. Top with whipped cream and white chocolate shavings if desired.
