How to Make It

Step 1

To prepare salad, combine first 7 ingredients in a large bowl.

Step 2

To prepare the dressing, combine the cheese and remaining ingredients in a small bowl, stirring with a whisk. Pour dressing over salad; cover and chill for 1 hour.

This is such a great recipe!! I love all of the flavors in it. I did sprinkle a little extra feta over my own bowl. My husband really enjoyed it also. I wouldn't mind adding more veggies too or putting it over some spinach. I would even like to add some whole wheat pasta or quinoa. It's so versatile! LOVED IT!

This is fantastic! I made a few variations. I didn't have canned artichokes but had some artichoke antipasto from Trader Joe's that I used instead and omitted the olive oil. I used fresh herbs from my garden. I used jarred roasted red pepper.

Loved this - I needed a side dish for a cookout, and was craving beans and feta. Found this recipe, which was very simple to make and absolutely delicious. It was definitely a hit at the party. I had kept some to eat the next day at home, and it was even better after it had marianated a day in the dressing.
