Chicken and tuna have some competition in the “salad” department. Think outside of poultry and its aquatic counterpart with bay scallops folded with an herby, chile-spiked mayo. Pro tip: perk up rice, eggs, or lifeless Chinese takeout with the spicy chili crisp (such as Lao Gan Ma) featured in the recipe. Sriracha fans, this is guaranteed to be your new favorite condiment.
I am a Nantucket Harbor bay scallop snorkle diver and I am always looking for innovative ways to serve them. I love savory sliders including this one with bay scallops but, to my taste, this preparation is too strong and savory for the very sweet Nantucket bay scallop. However, it is fabulous with just about any protein from shrimp to fish even to chicken. I loved the chile mayo and the fresh scallion and cucumber with fresh herbs flavoring. I used a buttery croissant instead of a buttered slider bun. I am sharing my review in hope that someone will share a recipe that compliments the sweet and delicate flavor of bay scallops.
