How to Make It
Whisk together eggs, oil, and salt with a fork in a small bowl.
Place flour on a work surface, and create a well in the center. Pour egg mixture in well. Working from the outside in, gradually work flour into egg mixture until most of the flour has been incorporated and a dough forms.
Knead dough until smooth, working in remaining flour, 5 to 10 minutes.
Wrap dough in plastic wrap, and let rest 20 minutes before rolling into desired pasta shape.
Add all ingredients to the bowl of a stand mixer fitted with a dough hook. Mix dough on medium-low speed until smooth and elastic.
