How to Make It

Step 1

Stir together barbecued pork and next 3 ingredients.

Step 2

Place 1 tortilla in a hot lightly greased skillet or griddle. Sprinkle tortilla with 1/4 cup cheese, and spoon 1/3 cup pork mixture on half of tortilla. Cook 2 to 3 minutes or until cheese melts. Fold tortilla in half over filling; transfer to a serving plate. Repeat procedure with remaining tortillas, cheese, and pork mixture. Serve with desired toppings.

Chef's Notes

For an easy side, melt a few tablespoons of butter with minced garlic and a dash of chili powder in a microwave-safe bowl; pour over boiled or grilled corn on the cob.

I tried this recipe last night during the third snowstorm of the year here in VA. My husband and I loved it...I'll definitely fix it again. I used crock pot barbecue that I had previously made and frozen...worked very well

BBQ pork sandwiches are a favorite here and this recipe just gave us a new twist. The children loved it. Very easy to make especially since I cook a whole pork roast (when on sale) in the crock pot with BBQ sauce and then freeze it in small packages. I just had to defrost and add the onions and cilantro.
