For this and the salsa recipe, it's best to use under-ripe bananas that are green at the stem. The recipes should mention this helpful fact.

This was actually a pretty good twist on a classic Waldorf salad. I used peach-infused vinegar and low-fat mayo. The only sad thing is that bananas don't keep well once sliced and turn brown and mushy rather quickly.
