How to Make It

Step 1

Preheat oven to 225°F. Lay 8 slices of bread on a work surface and spread 1 side of each with cream cheese. Top each with slightly overlapping banana slices. Cover with remaining bread to make sandwiches.

Step 2

Melt 2 Tbsp. butter over medium heat in a large nonstick skillet. Meanwhile, in a large, shallow bowl, beat eggs, milk, vanilla and salt with a fork. Dip 4 sandwiches into egg mixture to soak both sides, about 5 seconds. Lay sandwiches in skillet and cook, turning until browned, about 5 minutes one side, 3 minutes other side. Repeat with remaining butter and sandwiches. When done, transfer to oven racks; do not stack. Serve hot with warm maple syrup.

Very good; did not have cinnamon bread so after spreading bread with cream cheese, just sprinkled with a little cinnamon before adding bananas. Lots of calories, but tasty.

This is delicious! The cream cheese inside makes it so decadent. It looks gorgeous when its on the plate, especially if sprinkled with powdered sugar. I served it with a side of vanilla yogurt topped with with bananas, cinnamon, and granola and it was definitely worthy of a special brunch! Will certainly make again. My only beef with the recipe is that it's a little too caloric to have often. I have made it with skim milk, egg whites, low-fat cream cheese, and organic multi-grain bread and it tasted just as good.
