Combine first 8 ingredients in a large bowl, and make a well in center of mixture. Combine banana and next 7 ingredients (banana through egg) in a bowl, and add to flour mixture. Stir just until moist. Spoon batter into 18 muffin cups coated with cooking spray.
Bake at 400° for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.
These muffins were good but would benefit from 1 and 1/2 teaspoon of each spice. They did not taste very "spicey". I used yogurt because I did not have ricotta, but I would like to try them again with ricotta because I think they would have a lighter texture.
This recipe is just ok. The muffins rose nicely but were a little chewy and I made sure to not over stir them. I reduced the sugar to 1/4c each but I wouldn't reccemond it, they were quite bland and you could barely taste the banana. With some tweaks these could be pretty good.
definitely liked it. i added a little more banana than it called for and i also added cottage cheese since i didn't have ricotta, i also did 1/2 a teaspoon of cinnamon and 1/2 a teaspoon of ginger. i will probably add more spices next time i make this, but they are definitely yummy :)
