Doubled the recipe, halved the sugar, added tsp. cinnamon and 1/2 tsp. nutmeg. Substituted half cup ground flax meal for some of the oatmeal. Much healthier with these changes. Would consider adding another banana as other reviewer alluded to.
Texture was really weird and bland with a faint banana flavor. However, take my review with a grain of salt as my expectations may have just been off.
I would say "outstanding/5 stars" for what it is: an energy bar. Great quick snack or breakfast. Tasty and chewy--won't break a tooth on it but I would not say "cakey". It's consistency is like a storebought chewy bar (SB?) not like a granola bar. I doubled the recipe and put in a 9x13 pan; baked for a few minutes more than called for. Turned out great!
