The sweetness in this whole wheat banana bread comes mostly from the four bananas.

How to Make It

Step 1

Preheat oven to 350°.

Step 2

Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl. Combine sweetener and next 3 ingredients; add to flour mixture, stirring just until moist.

Step 3

Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350° for 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.

This was a simple & quick to make recipe. The aroma, the initial flavor was very good. The texture good have been a bit more moist. The only thing I didnt like was the after taste of using the artificial sweetner. It's hard for me to describe. Would I do this recipe again? Absolutely but probably use a bit more banana that was even riper for the sweetness & maybe some unsweetned apple sauce to add moisture. If anyone has another suggestion, I'm all ears!

I baked this as an alternative to birthday cake for the diabetics in my boyfriend's family. I am so disappointed by this recipe because it turn out very flat, and very different to the photo. I have made "normal" banana bread a number of times with great sucess so I was excited when I found this. I followed the recipe to the letter. Honestly, I am not sure where I went wrong. I am a bit embarrassed to serve this to his family tomorrow. :(

I just baked this banana bread and I liked it very much. It was soft and kind of fluffy inside. I changed a few ingredients because I didn't have them in the house. Instead of butter, I used olive oil, instead of sweetener I used raw organic sugar and instead of four bananas I used two (that was all on hand) so I had to add some water to the batter. It still came out great and I would use it again. Next time maybe add nuts to the batter.
