How to Make It

Step 1

Preheat oven to 350°.

Step 2

Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl. Combine sweetener and next 3 ingredients; add to flour mixture, stirring just until moist.

Step 3

Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350° for 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.

Good recipe, definitely a whole wheat flavor though to be aware of. Very moist/banana-y even a week later. I sprinkled a few walnuts on top before baking which I thought added a nice crunch. I also used 1/4 cup of sugar rather than the artificial sweetener, and baked it in a 9x5 pan for about 5 minutes less.
