Baked Pimiento Cheese
Love pimiento cheese? This baked version might be even better. It's the perfect appetizer for parties and tailgating and is delicious served with crackers.

This recipe is simply awesome. I always use Old English cheese spread for the sharp cheddar portion and then just extra sharp cheddar cheese any brand. You MUST use the grated onion or it just won't taste the same. The mayo can be cut down by a half cup with no problem. Serve this hot with soft buttery crackers like Townhouse or Ritz and it's so good.
Made this for a gathering of friends and it was a big hit. I cut the mayo to a scant 1 cup and used dried minced onion. I would probably not use the parsley garnish again - it looked nice but people didn't eat the parsley topped portion. This was super easy to prepare. Will definitely make again.
For ease of preparation and great taste, this gets 5 stars. I cut the mayo slightly and used onion powder instead of onion. I ran out of time and didn't put the parsley garnish, which would have made it prettier, but it was tasty all the same. I served it with Ritz Toppers.
Turned out greasy and no one wanted to eat it.
This was awesome! Definitely a keeper for the recipe file!
