How to Make It

Step 1

Preheat oven to 425°.

Step 2

Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine eggs and next 3 ingredients, stirring well; add to dry ingredients, stirring just until dry ingredients are moistened.

Step 3

Coat 36 miniature (1 3/4-inch) muffin cups with cooking spray. Spoon about 1 tablespoon batter into each muffin cup (cups will be about three-fourths full).

Step 4

Bake at 425° for 15 minutes or until done. Remove from pans immediately, and serve warm.

These are really just tiny corn muffins, but they make a nice substitute for hush puppies if you're avoiding fried foods. We dipped ours in honey - YUM! Also added a diced jalapeno for some extra heat.
