How to Make It

Preheat oven to 350°. Combine green onions, goat cheese, and bacon. Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper. Heat a large ovenproof skillet over medium-high heat. Add canola oil. Add chicken to pan; sauté 4 minutes. Turn chicken over. Bake at 350° for 12 minutes; let stand 5 minutes.

I would actually give this 2.5 stars, and I probably won't make it again. I used center cut bacon and tomato-basil feta. It was ok. My husband said, "it was good, just not good enough to have again".

This was tasty but I felt like it needed more filling. Followed exactly but used 3.5 oz. cheese.

Very quick and easy, my local store carries goat cheese in 3.5 oz container, I just went ahead and stuffed the chicken with all the cheese along with the other ingredients. Oh and I also I used regular onions instead of green onions because I had that on hand. Used slightly less then 2 tablespoons and everything still came out well. I will make it again for sure.
