How to Make It

Step 1

Process avocados and next 3 ingredients in a blender or food processor until smooth, stopping to scrape down sides.

Step 2

Pour mixture into a large bowl; stir in half-and-half and next 3 ingredients until smooth. Place plastic wrap directly over soup; chill 1 hour. Garnish before serving, if desired.

Step 3

*Off-dry white wines such as Gewürztraminer or Chenin Blanc may be substituted.

This was the first time I'd ever made or eaten Avocado Soup, and I loved it. My only tweak, a squirt of Sriracha Sauce, just enough heat and bite to amp the flavour, and the contrast of red on green... So pretty, pretty delicious!

This is the very best avacado soup recipe I have ever tried. I served this last night for a dinner party first course and everyone wanted the recipe. It was super easy to prepare. I served it with a dollup of sour cream on top.
