To make the bruschetta shown on our cover, top baguette slices with ricotta cheese mixed with assorted fresh herbs.

 

How to Make It

Combine first 5 ingredients in a large bowl. Let stand 10 minutes. Add lettuce and avocado; toss gently.

Nice flavors all in all; nothing really outstanding here.  Basic, easy side.  Might be interesting to use an infused olive oil.

I made this last night and it was fantastic! Definitely making it again and again. I used a lime infused olive oil and marinated the onions for longer than stated in the recipe, more like around 1/2 hr.

This was a nice simple salad. I used less onion and put just a bit of honey in the dressing since it was so tart. Really love the lime flavor with the avocado.

Quick and delicious. I opted for 2 tablespoons of lime juice and 1 tablespoon of oil in my dressing; still tasted great.
