Asparagus-Stuffed Portobello Mushrooms

This was delicious and pretty quick and easy. I also used whole wheat panko instead of my own breadcrumbs. Served with cauliflower gratin with tomatoes, capers & feta (recipe from Vegetarian Times). I was first planning just a salad, but I think a more substantial vegetable made more sense.
One of my favorite go to quick meals! I sometimes add feta or goat cheese as a change up and I link to use Panko bread crumbs for my topping. HIghly recommend!
