Eating all your veggies is easy when the veggie is Asparagus Saute. Asparagus and red bell pepper are sauteed in melted butter and served with a sprinkling of salt and pepper. How simple and delicious is that?
2 pounds fresh asparagus
1/4 cup butter or margarine
1 large red bell pepper, diced
1/2 teaspoon salt
1/2 teaspoon pepper
How to Make It
Snap off and discard tough ends of asparagus.
Melt butter in a large skillet over medium heat. Add asparagus, bell pepper, and remaining ingredients, and sauté 4 to 5 minutes or until crisp-tender. Serve immediately.
Sauteeing for 4-5 min. just didn't seem long enough. There's a lot of vegetables in the skillet for them to be reasonably done in that period of time. I sauteed a little longer, then turned off the stove & put a lid on it and let the heat continue to cook them until the rest of the meal was ready. The flavor was good. Just not outstanding.
