  • Combine apricots and liqueur in a large mixing bowl; stir well.

  • Beat 1 cup whipping cream in a small mixing bowl until foamy; gradually add sugar, beating until soft peaks form. Fold sweetened whipped cream and lemon rind into apricot mixture.

  • Spoon apricot mixture into 6 stemmed dessert glasses. Lightly grate chocolate over top of each serving. Chill thoroughly.
