Soften gelatin in water. Place mixture in top of a double boiler; cook over boiling water, stirring constantly, until gelatin dissolves. Remove from heat; add remaining ingredients, except mint leaves, mixing well. Pour into 5 lightly oiled 1/3-cup molds; chill until firm. Unmold onto a serving platter. Garnish with mint leaves.
